- 1 egg

- 1–2 tbsp milk
- ½ tsp vanilla extract

1. Make the blueberry filling
- Add blueberries, sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt to a small saucepan.
- Cook over medium heat for 5–7 minutes, stirring occasionally.
- The berries will burst and the mixture will become thick and jammy.
- Remove from heat and allow the filling to cool completely.
Important: The filling needs to be cool and thick before assembling the pie bombs. Warm filling can make the dough difficult to seal.
2. Prepare the dough
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Whisk flour, sugar, baking powder, and salt together.
- Cut the cold butter into the flour mixture using your fingers or a pastry cutter until it resembles coarse crumbs.
- Add milk and vanilla.
- Stir just until a soft dough forms. Don’t overmix.
3. Form the pie bombs
- Divide the dough into 10–12 equal pieces.
- Roll each piece into a ball.
- Flatten each ball into a small circle, approximately 4 inches wide.
- Place about 1 tablespoon blueberry filling in the center.
- Carefully pull the dough around the filling.
- Pinch the edges together firmly to completely seal the filling inside.
- Place seam-side down on the baking sheet.
- Gently flatten the top slightly if needed.
4. Add the egg wash
Whisk the egg with 1 tablespoon milk.
Brush the tops of each pie bomb with the egg wash. This gives them the shiny golden finish shown in the photo.
5. Bake
Bake for 18–23 minutes, or until puffed and beautifully golden brown.
Allow them to cool for 10–15 minutes before serving because the blueberry filling will be extremely hot.
6. Optional glaze
Mix powdered sugar, milk, and vanilla until smooth.
Drizzle over the cooled pie bombs.
