Low-Carb Stuffed Pepper Soup

A hearty one-pot soup made with ground beef, colorful bell peppers, tomatoes, herbs, and cauliflower rice instead of traditional rice. Low-carb versions commonly use cauliflower rice to keep the classic stuffed-pepper flavor while reducing the carbohydrate content.

  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow or orange bell pepper, diced
  • 2 medium carrots, diced
  • 2 medium tomatoes, chopped
  • 1 can (14–15 oz) diced tomatoes, preferably no-sugar-added
  • 2 tablespoons tomato paste
  • 4 cups low-sodium beef broth
  • 2 cups cauliflower rice, fresh or frozen
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon red pepper flakes, optional
  • 1 tablespoon Worcestershire sauce, optional
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped, optional

Optional toppings

  • 1–2 tablespoons grated Parmesan per serving
  • Fresh parsley
  • A small spoonful of plain Greek yogurt

Instructions

1. Brown the beef

Heat a large soup pot over medium-high heat. Add the ground beef and cook for about 6–8 minutes, breaking it apart with a spoon until browned and cooked through.

Drain excess grease if necessary.

2. Sauté the vegetables

Add the olive oil, onion, green pepper, red pepper, yellow/orange pepper, and carrots.

Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.

Add the garlic and cook for another 30 seconds.

3. Add the seasonings

Stir in:

  • Italian seasoning
  • Smoked paprika
  • Oregano
  • Black pepper
  • Salt
  • Red pepper flakes, if using

Cook for about 30 seconds so the spices become fragrant.

4. Build the soup

Add the chopped fresh tomatoes, canned diced tomatoes, tomato paste, beef broth, and Worcestershire sauce if using.

Stir well and bring the soup to a gentle boil.

5. Simmer

Reduce the heat to low, cover, and simmer for 20–25 minutes.

This gives the peppers, carrots, tomatoes, and beef time to develop a richer flavor.

6. Add cauliflower rice

Stir in the cauliflower rice.

  • Fresh cauliflower rice: simmer about 7–10 minutes.
  • Frozen cauliflower rice: usually 5–7 minutes is enough.

Avoid overcooking it so it doesn’t become mushy.

7. Finish

Taste and adjust the salt and pepper.

Stir in fresh parsley and basil just before serving.

Ladle into bowls and top with a little Parmesan if desired.
