Salted Caramel Crunch Protein Fluff Cups
Creamy, fluffy and packed with protein, these salted caramel crunch cups taste like a rich cheesecake dessert while being easy to prepare ahead for the week.
Ingredients
Protein Fluff
- 1 cup low-fat cottage cheese
- 1 cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 1 box sugar-free salted caramel cheesecake pudding mix — about 1 oz (28 g)
- ½ teaspoon vanilla extract
- ¼ teaspoon caramel extract, optional
- 1–2 tablespoons zero-calorie sweetener, optional
- 2–4 tablespoons unsweetened almond milk, as needed
- ¼ teaspoon sea salt
Crunch
- ¼ cup chopped roasted peanuts or pecans
- 2 tablespoons sugar-free toffee bits
- 1 tablespoon crushed sugar-free caramel candies, optional
- Small pinch of sea salt
Optional Topping
- Light whipped topping
- Extra chopped nuts
- Sugar-free caramel drizzle
Instructions
- Make the fluff:
Add cottage cheese, Greek yogurt, protein powder, pudding mix, vanilla extract, caramel extract and sea salt to a blender or food processor. - Blend until smooth:
Blend for 1–2 minutes, scraping down the sides as needed. Continue until the cottage cheese is completely smooth and the mixture is thick and creamy. - Adjust the texture:
Add almond milk 1 tablespoon at a time if the mixture is too thick. Don’t add too much—the finished fluff should be thick enough to hold its shape. - Prepare the crunch:
Mix the chopped nuts, sugar-free toffee bits and a tiny pinch of sea salt in a small bowl. - Layer the cups:
Spoon a layer of protein fluff into 4–5 small containers. Add a little caramel crunch, then another layer of fluff. - Finish the tops:
Sprinkle each cup with the remaining nut-and-toffee mixture. Add a small amount of whipped topping or sugar-free caramel drizzle if desired. - Chill:
Cover and refrigerate for at least 1–2 hours. The texture becomes thicker and the caramel flavor develops as it chills.

💡 Tips
- For the smoothest texture, blend the cottage cheese before adding the other ingredients.
- Don’t skip the small amount of salt—it balances the sweetness and gives the dessert its salted-caramel flavor.
- Keep the crunchy topping separate if you’re meal-prepping several days ahead so it stays crisp.
- For a stronger caramel flavor, add a little caramel extract.
- Use individual containers with lids for an easy grab-and-go dessert.
❓ Q&A
Can I make these ahead for the week?
Yes. Store the covered cups in the refrigerator for about 3–4 days.
Can I use Greek yogurt instead of cottage cheese?
Yes, although the protein and texture will change. The cottage cheese helps create a thick, creamy and high-protein base.
Can I use regular cheesecake pudding mix?
Yes, but the carbohydrate and sugar content will be higher than with sugar-free pudding mix.
Can I leave out the protein powder?
Yes, but the protein content will be significantly lower.
Can I use a different protein flavor?
Vanilla works especially well, but caramel, cheesecake or unflavored protein powder can also work.
How do I make the fluff thicker?
Use less almond milk and chill it longer. You can also add a little more Greek yogurt or pudding mix.
Can I freeze these?
Freezing isn’t ideal because the dairy-based fluff can change texture after thawing. Refrigeration gives the best creamy consistency.
Can I use different nuts?
Absolutely. Pecans, walnuts, almonds or peanuts all pair beautifully with salted caramel.
