A naturally sweet, moist apple-oat loaf made with just a few simple ingredients. No added sugar and no wheat flour.

Instructions

1. Prepare the Oats

Blend the rolled oats until they become a fine oat flour.

2. Prepare the Apples

Peel and grate the apples. If they release a lot of liquid, lightly squeeze them, but keep some moisture for the cake.

3. Make the Batter

In a large bowl, whisk together the eggs, milk, vanilla, and grated apples.

Add the blended oats, baking powder, cinnamon, and salt. Mix until everything is well combined.

Fold in the nuts and dried cranberries if using.

4. Rest the Batter

Let the mixture sit for 5–10 minutes. The oats will absorb some of the liquid and the batter will thicken.

5. Bake

Pour into a greased loaf pan approximately 8 × 4 inches (20 × 10 cm).

Sprinkle a few chopped nuts over the top if desired.

Bake at 350°F (175°C) for 35–45 minutes, or until the top is golden and a toothpick inserted in the center comes out mostly clean.

6. Cool

Let the loaf cool in the pan for about 10–15 minutes, then transfer it to a rack and allow it to cool before slicing.
