Ingredients — 4 servings

Main

  • 1 large cauliflower, cut into florets — about 700–800 g
  • 1½ cups cooked chickpeas — about 250 g
  • 2 celery stalks, sliced
  • ½ cup dried cranberries
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp turmeric
  • ¼ tsp chili flakes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp fresh thyme leaves

Optional savory topping

  • 75–100 g cooked turkey/chicken bacon, chopped

Lemon finish

  • 1–2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • Extra fresh thyme

👩‍🍳 Detailed Recipe

1. Heat the oven

Preheat to 220°C / 425°F.

Line a large baking tray with parchment.

2. Prepare the chickpeas

Drain and rinse the chickpeas.

Pat them very dry with paper towels. This is important for getting them crispy.

3. Season

Place cauliflower and chickpeas in a large bowl.

Add:

  • olive oil
  • smoked paprika
  • cumin
  • coriander
  • turmeric
  • chili flakes
  • salt
  • black pepper
  • garlic

Toss thoroughly.

4. Roast

Spread everything in a single layer.

Roast for 25–35 minutes, turning everything halfway through.

5. Add celery and onion

For the final 10–12 minutes, add the celery and red onion to the tray.

6. Add cranberries

Remove the tray from the oven and immediately add the dried cranberries.

The residual heat softens them slightly.

If using turkey or chicken bacon, cook separately until crisp, chop it and scatter it over the roasted vegetables.

8. Finish

Add lemon juice and lemon zest.

Sprinkle with fresh thyme.
