Equipment

  • 9-inch pie dish
  • Medium saucepan
  • Whisk
  • Mixing bowl
  • Measuring cups and spoons
  • Rubber spatula
  • Strainer (optional for smooth texture)

Ingredients

  • 1 pre-made pie crust or homemade, if preferred
  • 1 cup heavy cream
  • 1 cup whole milk
  • cup sugar
  • 4 oz semi-sweet chocolate chopped
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • 2 tbsp cornstarch for thickening
  • Pinch of salt

Instructions

Step 1: Prepare the Pie Crust

  • Start by pre-baking your pie crust. Follow the instructions on the packaging or bake it at 350°F for 10-12 minutes until golden brown. Let it cool completely before adding the filling.

Step 2: Heat the Cream and Milk

  • In a medium saucepan, combine heavy cream and whole milk. Heat the mixture over medium heat until it starts to simmer, stirring frequently. Do not bring it to a boil.

Step 3: Melt the Chocolate

  • Add the chopped semi-sweet chocolate to the simmering cream and milk mixture. Stir continuously until the chocolate is completely melted and the mixture is smooth.

Step 4: Whisk the Eggs and Sugar

  • In a separate mixing bowl, whisk together the egg yolks, sugar, and a pinch of salt until the mixture is smooth and slightly thickened.

Step 5: Temper the Eggs

  • Slowly pour a small amount of the hot milk and chocolate mixture into the egg mixture, whisking constantly to temper the eggs and avoid curdling. Gradually add more of the hot mixture while continuing to whisk.

Step 6: Combine and Cook

  • Once the egg mixture is tempered, pour it back into the saucepan with the remaining chocolate milk mixture. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

Step 7: Add Butter and Vanilla

  • Once thickened, remove from heat and stir in the butter and vanilla extract until fully combined and smooth.

Step 8: Pour into the Pie Crust

  • Pour the chocolate filling into the pre-baked pie crust, smoothing it out with a spatula. Let the pie cool to room temperature.

Step 9: Chill the Pie

  • Place the pie in the refrigerator to chill for at least 3 hours, or overnight, for the best texture.

Notes

  • Pie Crust Tip: While this recipe uses a pre-made pie crust to save time, you can also opt to make your own homemade crust for an extra touch of flavor. If you choose a homemade crust, be sure to blind-bake it before adding the filling.
  • Chocolate Tip: For the richest flavor, use high-quality semi-sweet or bittersweet chocolate. The chocolate's quality is key to the smooth, velvety filling.
  • Chilling Time: Don't skip the chilling time! The pie needs at least 3 hours to set properly in the fridge. If you have time, it's even better to leave it overnight.
  • Serving Suggestions: This pie pairs beautifully with whipped cream, fresh fruit like raspberries or strawberries, or even a scoop of vanilla ice cream. The smooth chocolate filling can also be garnished with chocolate shavings for an elegant presentation.
  • Diet Modifications: You can make slight modifications for dietary preferences. For example, use dairy-free cream and milk for a dairy-free version. You can also substitute the sugar with a sugar alternative, like stevia or monk fruit, for a lower-sugar version, though this might slightly alter the texture of the filling.
