Step 01: Prepare the Scallops

  • First, pat the scallops dry with a paper towel to remove any excess moisture. This is crucial to achieve that perfect sear. Season the scallops with a pinch of salt and pepper on both sides.

Step 02: Heat the Pan

  • Heat your large skillet or frying pan over medium-high heat. Add the olive oil and allow it to heat until it starts to shimmer, but not smoke.

Step 03: Sear the Scallops

  • Place the scallops in the pan, being careful not to overcrowd them. Allow them to cook for about 2-3 minutes on the first side without moving them, so they get a golden crust.

Step 04: Flip the Scallops

  • Once the scallops have a nice golden crust, flip them over using tongs. Cook for an additional 2 minutes, or until they are opaque and firm to the touch. Remove them from the pan and set them aside on a plate.
