Ingredients

  • 6-8 fresh jalapeño peppers
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese for extra creaminess
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 cup breadcrumbs panko for extra crispiness
  • ½ tsp salt
  • ½ tsp black pepper
  • Oil for frying

Instructions

Prepare the Peppers:

  • Start by slicing the jalapeños in half lengthwise and carefully removing the seeds and membranes. This step helps reduce the heat level, making them more enjoyable for those who prefer milder spice. Pat them dry with a paper towel to remove excess moisture, ensuring better adherence for the coating.

Make the Cheese Filling:

  • In a bowl, mix shredded cheddar cheese, cream cheese, garlic powder, onion powder, and smoked paprika until well combined. This mixture creates a creamy, flavorful filling that enhances the taste of the jalapeños.

Stuff the Peppers:

  • Use a spoon or piping bag to fill each jalapeño half with the cheese mixture. Be sure to press the filling in firmly but avoid overfilling, as too much cheese can spill out during frying.

Prepare the Batter:

  • In one bowl, mix all-purpose flour with salt and black pepper. In a second bowl, pour buttermilk, and in a third bowl, place the breadcrumbs. Having these separate will allow for an efficient coating process.

Bread the Peppers:

  • Dip each stuffed jalapeño first into the flour mixture, ensuring an even coat. Then, dip it into the buttermilk, allowing excess liquid to drip off before rolling it in breadcrumbs. For an extra crispy texture, repeat the buttermilk and breadcrumb coating process.

Fry to Perfection:

  • Heat oil in a deep fryer or a heavy-bottomed pan to 350°F (175°C). Carefully place the breaded jalapeños into the oil and fry them in small batches for about 2-3 minutes until golden brown. Remove them from the oil and let them drain on a paper towel to absorb any excess oil.

Season and Serve:

  • Lightly sprinkle the poppers with a pinch of salt while they’re still hot. Serve immediately with your favorite dipping sauces to enhance their flavor.

Notes

These poppers are best served fresh, but they can be reheated in the oven at 350°F for 5-7 minutes. For a healthier alternative, use an air fryer at 375°F for 10 minutes. Experimenting with different cheeses, such as pepper jack or gouda, can offer unique flavor variations.
