Equipment

  • Saucepan
  • Wooden spoon or spatula
  • Measuring spoons
  • Knife and cutting board

Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 3-4 chili peppers adjust based on desired heat level
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup water

Instructions

Step 01: Heat Oil

  • Start by heating olive oil in a saucepan over medium heat.

Step 02: Cook Garlic

  • Add the minced garlic to the pan and sauté for about 1 minute, or until fragrant.

Step 03: Add Chili Peppers

  • Chop up the chili peppers and add them to the pan. Sauté for another minute to release their oils.

Step 04: Incorporate Tomato Paste

  • Stir in the tomato paste and cook for 2-3 minutes, allowing the flavors to blend.

Step 05: Mix Wet Ingredients

  • Add soy sauce, vinegar, and water to the saucepan. Stir to combine all the ingredients.

Step 06: Add Spices

  • Now, add paprika, cumin, salt, and pepper to the mix, stirring until well combined.

Step 07: Simmer

  • Bring the sauce to a gentle simmer, stirring occasionally for 5-7 minutes. Allow the flavors to meld together.

Step 08: Adjust Consistency

  • If the sauce is too thick, add more water to reach your desired consistency.

Step 09: Blend (Optional)

  • For a smooth texture, you can blend the sauce using an immersion blender or a regular blender. This is optional if you prefer a chunkier sauce.

Step 10: Cool and Store

  • Once your sauce is done, let it cool and store it in an airtight container in the refrigerator for up to a week.

Notes

  • Adjusting Heat: This recipe calls for chili peppers to give it a spicy kick, but the heat can be adjusted based on your preference. If you want a milder version, reduce the number of chili peppers or use milder peppers such as bell peppers. You can also remove the seeds to reduce the heat.
  • Tomato Paste: The tomato paste is what gives the sauce its rich, savory base. Don’t substitute with regular ketchup or fresh tomatoes, as it may alter the consistency and flavor.
  • Blending Option: For a smooth and velvety sauce, blend the mixture after cooking. This step is optional but highly recommended if you prefer a smoother consistency. An immersion blender works best for this, but a regular blender will work as well. Just let the sauce cool before blending.
  • Storage and Shelf Life: Poyo Poyo Sauce keeps well in the refrigerator for up to 1 week. It can also be frozen for up to 3 months in an airtight container. When you're ready to use it, simply thaw it in the fridge or heat it gently on the stovetop.
  • Vegan Version: To make this sauce vegan, ensure you use a plant-based soy sauce and vinegar. This sauce is already naturally dairy-free and gluten-free, making it a great choice for various dietary restrictions.
  • Versatility: Use this sauce not only as a condiment but also as a marinade for chicken, tofu, fish, or vegetables. Its tangy, spicy flavor pairs well with grilled or roasted dishes. You can even drizzle it over rice, pasta, or use it as a dip for bread.
  • Heat Adjustment Tips: If you like the sauce spicier, increase the number of chili peppers or add a pinch of cayenne pepper. Conversely, for a milder version, use fewer peppers and add a little more vinegar to balance the flavor without increasing heat.
