Equipment

  • Baking dish or escargot dishes
  • Mixing bowl for the filling
  • Spoon for stuffing the shrimp
  • Oven-safe pan or baking tray

Ingredients

  • 12 large shrimp peeled and deveined
  • 3 tbsp unsalted butter softened
  • 3 garlic cloves minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh lemon juice
  • ¼ cup grated Parmesan cheese
  • ¼ cup breadcrumbs optional for added crunch
  • Salt and pepper to taste

Instructions

Step 1: Preheat Your Oven

  • Preheat your oven to 375°F (190°C). Make sure your baking dish or escargot dishes are ready.

Step 2: Prepare the Shrimp

  • Pat the shrimp dry and carefully cut a small slit along the back, ensuring not to cut all the way through. Gently remove any remaining veins.

Step 3: Make the Garlic Butter Mixture

  • In a bowl, combine softened butter, minced garlic, chopped parsley, lemon juice, Parmesan cheese, and salt and pepper. Stir until the ingredients are well mixed.

Step 4: Stuff the Shrimp

  • Stuff each shrimp with a generous amount of the garlic butter mixture. You can also sprinkle breadcrumbs over the top for a crispy finish.

Step 5: Arrange the Shrimp

  • Place the stuffed shrimp into your baking dish, arranging them neatly.

Step 6: Bake

  • Bake the shrimp in the preheated oven for 12-15 minutes, or until the shrimp turn pink and the butter has melted and started bubbling.

Notes

  • Fresh Shrimp: Always use fresh shrimp if possible for the best flavor and texture. If using frozen, ensure the shrimp are properly thawed before preparation.
  • Stuffing Variations: You can get creative with the stuffing by adding ingredients like crumbled bacon, sautéed mushrooms, or even a sprinkle of cayenne pepper for some heat.
  • Baking Time: Keep a close eye on the shrimp while baking. Overcooking can cause the shrimp to become rubbery, so bake them until they turn a nice pink color and the butter mixture starts to bubble.
  • Serving Suggestions: Shrimp Cargot is versatile enough to serve as an appetizer or main course. Pair it with garlic bread, a simple green salad, or even a side of risotto for a complete meal. The garlic butter sauce is perfect for dipping.
  • Make Ahead: If you’re preparing this dish in advance, you can stuff the shrimp and refrigerate them until you’re ready to bake. Just pop them in the oven when it's time to serve.
