Step 1: Make the Pastry Crust

Step 2: Prepare the Custard

  • In a medium saucepan, combine the milk, sugar, and cornstarch. Whisk the ingredients until smooth. Over medium heat, bring the mixture to a gentle simmer while continuing to whisk constantly to avoid lumps.

Step 3: Cook the Custard

  • Once the milk mixture begins to thicken, beat the eggs in a separate bowl. Slowly pour a bit of the hot milk mixture into the eggs, stirring constantly to temper them. Then, add the egg mixture back into the saucepan and cook for a few more minutes until the custard is thick and smooth.

Step 4: Assemble and Bake

  • Pour the prepared custard mixture into your cooled pastry crust. Smooth it evenly with a spatula and place the whole dish in the oven for about 10 minutes to allow it to set.

Step 5: Cool and Serve

  • Once baked, remove the Tubby Custard from the oven and allow it to cool completely before serving. You can refrigerate it for a couple of hours to set further, or serve it warm for a cozy dessert.
